Sunday's Shrimp Scampi Pasta
Yield: 6 Servings
Ingredients
- 1 lb fettuccine pasta
- 2 lbs jumbo shrimp, peeled and deveined
- 6 tbsp butter
- 2 tbsp olive oil
- 6 cloves garlic, minced
- 1 cup white cooking wine
- Juice of 2 lemons
- ½ tsp red pepper flakes
- ½ cup Parmesan cheese
- ¼ cup fresh parsley
- Salt and pepper
Instructions
- Cook pasta and set aside.
- Heat butter and olive oil.
- Sauté garlic.
- Add shrimp and cook 2-3 minutes per side.
- Add wine, lemon juice, and red pepper flakes.
- Simmer 5 minutes.
- Toss with pasta.
- Garnish with parsley and Parmesan.
