Seared Salmon Bites with Creamy Garlic Sauce

Ingredients:
For the Salmon Bites:
1 lb salmon fillet, skin removed, cut into 1-inch cubes
1 tsp salt
1/2 tsp black pepper
1/2 tsp lemon zest
2 tbsp olive oil
For the Creamy Garlic Sauce:
2 tbsp butter
2 cloves garlic, minced
1/2 cup chicken or vegetable broth
1/2 cup heavy cream
Salt and pepper to taste
1 tsp fresh parsley, chopped
Instructions:
Prepare the Salmon: Season the salmon cubes with salt, black pepper, and lemon zest.
Sear the Salmon: Heat olive oil in a large skillet over medium-high heat. Add the salmon cubes and sear for 2-3 minutes on each side until golden brown and cooked through. Remove and set aside.
Make the Sauce: In the same skillet, reduce the heat to medium. Add butter and minced garlic, cooking until fragrant (about 1 minute). Stir in the broth and bring to a simmer. Reduce the heat and stir in heavy cream. Let the sauce simmer for 2-3 minutes until slightly thickened. Season with salt and pepper to taste.
Combine and Serve: Return the salmon bites to the skillet, spooning the sauce over them. Cook for 1-2 minutes to warm through. Garnish with fresh parsley and serve immediately.
