Tropical Coconut Lime Fish with Creamy Avocado Salsa




Ingredients:
1. 4 fish fillets (cod, tilapia, or any white fish)
2. 1 tbsp olive oil
3. 1/2 cup coconut milk
4. 1 tbsp lime juice
5. 1 tsp chili powder
6. Salt and pepper to taste
7. 1 avocado, diced
8. 1/2 red onion, finely chopped
9. 1 small tomato, chopped
10. 1 tbsp cilantro, chopped
11. 1 tbsp lime juice for salsa

Directions:
1. Preheat the oven to 375°F (190°C). Place fish fillets on a baking sheet lined with parchment paper.
2. In a small bowl, mix coconut milk, lime juice, chili powder, salt, and pepper. Pour over the fish fillets.
3. Bake fish for 15-20 minutes, or until fully cooked and flakes easily with a fork.
4. While the fish bakes, prepare the avocado salsa: In a bowl, combine diced avocado, red onion, tomato, cilantro, and lime juice.
5. Once the fish is done, plate the fillets and top with fresh avocado salsa.
6. Serve immediately, and enjoy the refreshing, tropical flavors of this dish!
